Making Summer Iced Tea

There is nothing quite like an ice cold glass of tea on a hot Summer day! In this post, you'll find recipes for sun tea or quick stove-top iced by the gallon and how to brew a single cup of quick iced tea.


In our home, there is ALWAYS a big ol' jug of iced tea in our fridge (even in the Winter). Here is one of our family favorites using Gnat & Bee Forest Berry Loose Black Tea. This blend has bits of dried strawberries and rose hips throughout a nice body of Assam Tea, as well as Honeysuckle flowers which add the delicate hint of floral that balances out the shining strawberry in this blend. I am very certain that this will become a favorite in your home as well.

Forest Berry Sun Tea (makes 1 gallon)

  1. Place 1/2 Cup of loose Forest Berry tea into a 2 quart container.
  2. Next, add water and stir.                        
  3. Cap and place in sun for 3-5 hours, move jar with the Sun as needed
  4. Strain out loose tea and add liquid along with 1/2 cup of sugar (or to your own taste preference) to your 1 gallon jug. 
  5. Stir until sugar is dissolved.
  6. Finally, fill up the rest of the jug with ice cold water. Enjoy!
If you don't want to wait for sun tea, or when winter is upon us, here are the quick stove top directions.

Stove-top Quick Iced Tea:

  1. Fill a large pan with 2 quarts of water.
  2. Heat until boiling, turn off heat.
  3. Add 1/2 cup of Forest Berry tea to water with 1/2 Cup of sugar ( or to your own taste preference) Stir until sugar is dissolved.
  4. Steep for 8 minutes, then strain into your pitcher.
  5. Top with ice cold water. Enjoy!

Single Cup Quick Iced Tea:

  1. Add 2 Tbsp loose leaf tea into an 8oz mason jar or mug.
  2. Bring water to a boil and pour over the loose leaf tea, filling it to the top.
  3. Let the tea steep for 5-10 minutes (less time for white & green tea)
  4. Fill a 16 oz glass or pint size mason jar to the top with ice.
  5. Add honey or sugar to the hot tea and pour over the cup full of ice through a strainer.
  6. Stir well and enjoy!                                   
Add some fresh Lemon Balm, Mint or Citrus to garnish your glass if you'd like. 
You can also do 1/4 Cup of Forest Berry with 4 black tea bags for this recipe.
A general rule of thumb when making iced tea is, if you want to make a half gallon of tea (2 quarts), use 4 tea bags. If you want to make a gallon use 8 tea bags.If the tea is too strong, simply add more water to your glass.

*This recipe works well with all Gnat and Bee teas. So many of the blends are wonderful hot and iced! You may find that you want to adjust tea/sweetener amounts to your own liking.
